Fast Food--Simon Style
(They looked more appetizing in person)
- Green beans
- Pick fresh from garden.
- Rinse and trim.
- Sprinkle with salt; add a dab or two of butter.
- Nuke in covered dish for ~15 minutes depending on quantity.
- Chicken
- Whole roasting chicken fresh from Mother Hubbard's (fresh cut daily!)
- Rinse, sprinkle and rub heavily with salt, inside and out.
- Bake in lightly oiled open baking dish in preheated toaster oven at 400 degrees for 1 hour 10 minutes.
- Trout
- Whole fresh trout, boned and cleaned.
- Rinse, sprinkle lightly with salt; add a dab or two of butter.
- Sprinkle with fresh chopped garden herbs: rosemary, thyme, tarragon.
- Top with a fresh sage leaf or two.
- Bake in lightly oiled open baking dish in preheated toaster oven at 500 degrees for ~5 minutes or until done.
- Tomato Soup
- Pick 1 basket bright ripe Roma tomatoes from garden.
- Rinse and quarter.
- Thumb seeds and gel from centers into bowl (reserve meat for tomato sauce..)
- Separate juice from seeds by shaking through wire strainer.
- Add garden fresh marjoram and a little rosemary. Salt to taste.
- Nuke on high for ~4 minutes (enough to boil for a minute or two).
- Chille Relleno
- Broil a large chille on both sides until the skin is easily peeled.
- Remove seeds and replace with cheese.
- Nuke.
